For variants you keep selling with Shopify's "Continue selling when out of stock", the app shows a note under the buy buttons, such as "Ships from 15 November", or a note without a date. The date comes from a product or variant metafield or a product tag, and a date that has passed is never shown. The note is added to the order line, so it appears at checkout and on the order. Payment and checkout stay as they are. Set up in the theme editor.
