In the collections you choose, products with no variant left to buy move below the in-stock products, about a minute after stock changes, and move back up when restocked. On product pages, sold-out sizes and colours are struck through, disabled or hidden. You can also unpublish sold-out products from the Online Store and publish them again when back in stock, choose the sort order and exclude tagged products. An activity log lists every change.
